    Holiday Recipes

    With so many activities going on during the holiday season and numerous events to host or attend, it can be difficult to find time to make delicious foods for these occasions. To help you get inspired to create tasty treats with little time, here are a few recipes.

    A roast may sound daunting, but this one is almost no work. Just put it together and place it in the oven while you do other tasks to get ready for your dinner party. All you have to do is add in tomatoes, garlic, thyme and olive oil, and the oven does the rest. It’s the perfect recipe for a dinner party or meal with family and friends around the holidays.

    2 pounds boneless rump or rib roast
    Salt and pepper to taste
    1 pint grape tomatoes
    1 head garlic, peeled
    8 sprigs fresh thyme
    3 tablespoons olive oil

    Heat the oven to 350 degrees Fahrenheit and season the beef with the salt and pepper. Place in large roasting pan. Combine tomatoes, garlic, thyme, oil and one-quarter teaspoon of salt and pepper in a bowl. Add the mixture over and around the meat. Cook for one hour for medium-rare, longer for more well-done. Place the beef on a platter and let it rest for 10 minutes before slicing.

    This dish just looks elegant sitting on a dinner table. It’s also easy to make and goes with a large variety of main entrees.

    1-1/2 cups orzo
    1 tablespoon extra-virgin olive oil
    1 small onion, chopped fine
    ½ teaspoon chopped thyme
    6 ounces goat cheese
    3 ounces cream cheese
    ½ cup mil
    1 tablespoon chopped parsley
    Salt and pepper
    2 tablespoons grated pecorino cheese

    Preheat the oven to 375 degrees Fahrenheit. Cook orzo according to directions until al dente. Drain. Cook onion in olive oil until tender, add thyme and cook one minute. Add goat cheese, cream cheese and milk and cook until cheese is melted. Remove from heat. Add orzo and parsley to the skillet mixture and stir. Put the pasta into an 8-inch backing dish and sprinkle with pecorino cheese. Bake 25 minutes or until browned.

    No menu is complete without dessert, and these delightful cookies double as ornaments or table decorations. The bonus is just how easy they are to make. All you have to do is take any plain cookie dough and divide it in half. Use food coloring on one half to get the color desired – red is perfect for the holiday, but you can also experiment. Roll each half into long ropes on a floured surface. Cut sections to the appropriate length to make candy canes. Twist two pieces together, using one of the plain and one colored rope. Bend one end into the traditional candy cane hook shape and bake as normal after chilling for 20 minutes.
